Healthy Hara-Bhara Kebabs Recipe by Chef Ilma

Looking for a nutritious yet delicious snack? Hara Bhara Kebabs are your answer! Packed with the goodness of green vegetables, this kebab is a great option for those who want to snack without compromising on their health. These kebabs are pan-fried with minimal oil, making them a guilt-free delight.

Ingredients: 

  • Oil: 2 tbsp 
  • Cumin seeds: 1/2 tsp 
  • Onion (chopped): 1/4 cup 
  • Capsicum (chopped): 1/4 cup 
  • Spinach (chopped): 1/4 cup 
  • Green beans (chopped): 1/4 cup 
  • Green peas: 1/4 cup 
  • Cumin powder: 1/4 tsp 
  • Salt: 1/4 tsp 
  • Garam masala: 1/4 tsp 
  • Chaat masala: 1/4 tsp
  • Green chili: 1 (finely chopped)

Instructions: 

  1. Prepare the base: Heat 2 tablespoons of oil in a pan. Add 1/2 teaspoon cumin seeds and let them crackle. 
  2. Sauté the onions: Add 1/4 cup chopped onions and sauté until they turn translucent, releasing their sweetness. 
  3. Add vegetables: Stir in 1/4 cup each of chopped capsicum, spinach, green beans, and peas. Sauté for 2-3 minutes, allowing the vegetables to soften. 4. Season the mixture: Add 1/4 teaspoon cumin powder, 1/4 teaspoon salt, 1/4 teaspoon garam masala, and 1/4 teaspoon chaat masala. Toss in 1 finely chopped green chili for a bit of heat. Mix well and sauté for another 10 minutes until the vegetables are cooked through. 
  4. Cool and blend: Turn off the heat and let the mixture cool slightly. Once cooled, blend it into a paste. Note: Do not add water while blending. 
  5. Shape the kebabs: Take portions of the mixture and shape them into small round or oval kebabs. 
  6. Pan-fry: Heat a little oil in a non-stick pan and pan-fry the kebabs for 2-3 minutes on each side, until they turn golden brown and crispy. 
  7. Serve: Garnish with fresh coriander or lemon wedges and serve hot with mint chutney or yogurt dip.
